I love the good old fashioned Black Country dishes that once upon a time graced our dinner plates. For many reasons, this dish is one of my personal favourites, Bread Pudding is lovely, easy, and cheap to make. So, here it is, my easy to follow recipe, traditional Black Country Bread Pudding.
2 ibs of stale bread with the crusts cut off
1ib granulated brown sugar
1 ib mixed dried fruit
3 eggs
2oz butter or margarine
1 teaspoon mixed spice
Then…
Soak the bread in water, then drain and squeeze out the excess moisture. Flake with a fork and add the remaining ingredients. Mix well together and spread the mixture into a greased baking tin. Dot with butter and sprinkle on top brown sugar and bake in a moderate oven for about two hours or until nicely browned. Then cut and serve in blocks, enjoy hot or cold.
